Dietary Fiber in Health and Disease Excerpt :

This volume carries the proceedings of the Vahouny Fiber Symposium, which took place in Washington DC, in March of 1996. George V. Vahouny pioneered this conference, which was conceived as a means of exchanging information on the latest advances in fiber research. The conference was renamed in George Vahouny's honor after his untimely death. In this volume we have included the reminiscences of Prof. A.R.P. Walker, one of the pioneers in the field, and discussion of the epidemiological findings relating dietary fiber to heart disease, cancer, and gastrointestinal disease. As the overall definition of fiber has broadened we have included for discussion other aspects of carbohydrate chem istry and metabolism. Complex carbohydrates were the subject of a full session and resis tant starch and the role(s) of oligosaccharides were discussed later in the meeting. Another area of fiber metabolism that is beginning to burgeon is that of the short chain fatty acids, and this too was the subject of presentations and discussion. In addition, the more familiar topics in dietary fiber were updated. Workshops devoted to specific areas of fiber research have now become a mainstay of these meetings, and they were repeated successfully. Due to restraints on spending, the attendance at this meeting was somewhat smaller than usual but the discussion was lively and pertinent. We are deeply grateful to our sponsors and contributors for their continuing interest in dietary fiber research, and for their generous support of this symposium.

Dietary Fiber and Health Excerpt :

Adequate fiber in the diet is essential for maintaining gastrointestinal and cardiovascular health and for weight management and glycemic control. But a majority of people in developed countries fall short of their recommended daily intake. Designed for product developers, nutritionists, dietitians, and regulatory agencies, Dietary Fiber and Health discusses critical findings from the Ninth Vahouny Fiber Symposium about the significance of dietary fiber and ways to get more fiber in our diet. Steeped in research and the latest data from international experts, the book explores a range of topics related to this essential nutrient, including: The relationship between fiber and weight management, gastrointestinal health, heart disease, cancer, and glucose metabolism Prebiotic effects of fiber and the characteristics and modulation of healthy flora The health benefits of novel fibers such as inulin The characteristics of maltodextrin, Fibersol-2, and low viscous fiber on satiety, glycemia, microbiota, and other properties The impact of the new definition of dietary fiber published by the Codex Alimentarius Commission The properties and immunological impact of Galactooligosaccharide and research on its effect on colitis Resistant starch and associated compounds Oat, rye, barley, and other fibers Regulatory issues, including GRAS notice procedure It is imperative that food product developers formulate foods with fiber and that health professionals recommend foods high in fiber to improve public health. The contributors to this volume provide a survey of not only the impact of fiber on human health, but also the myriad opportunities for fiber ingredients to be incorporated into foods for the benefit of consumers.

Food Wastes and By products Excerpt :

A complete guide to the evolving methods by which we may recover by-products and significantly reduce food waste Across the globe, one third of cereals and almost half of all fruits and vegetables go to waste. The cost of such waste – both to economies and to the environment – is a serious and increasing concern within the food industry. If we are to overcome this crisis and move towards a sustainable future, we must do everything possible to utilize innovative new methods of extracting and processing valuable by-products of all kinds. Food Wastes and By-products represents a complete primer to this important and complex process. Edited and written by leading researchers, the text provides essential information on the supply of waste and its composition, identifies foods rich in valuable bioactive compounds, and explores revolutionary methods for creating by-products from fruit, vegetable, and seed waste. Other chapters discuss the nutraceutical properties of value-added by-products and their uses in the manufacturing of dietary fibers, food flavors, supplements, pectin, and more. This book: Explains how reconstituted by-products can best be used to radically reduce food waste Discusses the potential nutraceutical assets of recovered food waste Covers a broad range of by-product sources, such as mangos, cacao, flaxseed, and spent coffee grounds Describes novel extraction processes and the emerging use of nanotechnology A significant contribution to the field, Food Wastes and By-products is a timely and essential resource for food industry professionals, government agencies and NGOs involved in nutrition, agriculture, and food production, and university instructors and students in related areas.

Nutrition in Health and Disease Excerpt :

This book deals with very different aspects of nutrition from different countries (qualities and quantities of food, their absorptions from the gastrointestinal tract, utilization in healthy human beings or in patients with different diseases, food and drug interactions, etc.). However, these different nutritional positions are different in the different countries. The 13 chapters were written by experts from countries in four continents (Asia, Africa, America, and Europe) and generally cover one nutritional problem each; however, if we analyze the results of all the chapters, we can see the most important nutritional problems from all over the world. This detailed analysis offers us an overview of this most urgent nutritional problem. We know that the world's population has increased exponentially in the last few decades (and is still increasing); however, foods and food products have increased more slowly. We have to solve these and other nutritional problems to ensure the health of generations to come.

Dietary Fiber Excerpt :

Only 15 years ago a conference on dietary fiber, let alone an international conference, would have been considered an extremely unlikely, and in fact an unthinkable, event. Yet in recent years a number of such conferences have taken place at the international level and in different parts of the world; the conference of which the present volume is an outgrowth is the second to have been held in Washington, D. C. This extraordinary development of interest in a hitherto largely neglected component of diet has been reflected by a veritable explosion of scientific literature, with published articles increasing 40-fold, from around ten to over 400 per year, within the decade 1968-1978. Not only has the growth of interest in and knowledge of fiber made it perhaps the most rapidly developing aspect of nutritional science in recent history if not in all time, but epidemiologic studies relating fiber intake to disease patterns, subsequently broadened to include other food components, have been largely responsible for the current concept of diseases characteristic of modern Western culture and lifestyle. The potential importance of this realization is forcefully underlined by the considered judgment of Thomas MacKeown, epidemiologist and medical historian of Birmingham University, England.
